Görseli, tadı, her şeyiyle süperdi.

These are my Stuffed Melons

Bu da Asitane'den
This one is from Asitane
Since I have been working last weekend, I couldn’t cook a new recipe, that’s why I want to share with a very special taste. I know that most of you would make a face when you first read the title. But after you taste it, the look on your face becomes “how it can happen?”

I will answer without taking your time: “delicious, delightful, and yummy”

I got this recipe from one of the most original restaurants of Istanbul “Asitane”. It was years ago when I tasted this dish after hearing so many good comments on it. When I was there, I looked at the menu and Stuffed Melon hit me and I immediately ordered.

Everything was perfect, the taste, and the presentation. The owner of the restaurant with all his kindness gave me the recipe and I cooked it as soon as I could.

I admit that it was the end of melon season and I couldn’t find the right melon type however it was still very good J

It was 3 years ago when I first cooked this recipe. Unfortunately I don’t have that many photos because at that time I didn’t have any intention of writing a blog, but still have one sample of what I cooked. And also if I add one more photo provided from Asitane Restaurant, this would be more than enough to show you its beauty.

And again, I am really sorry that I will not be able to share the recipe since the recipe and the idea are taken from a Professional. Principle of respect to professionals J

Just a quick reminder the idea of cooking Rice Stuffed Vine Leaves was coming from this restaurant as well.

What I can do is to provide the web site of the restaurant for the ones who would like to try Stuffed Melon.  http://www.asitanerestaurant.com/English/index.php

I felt like I should give some more information about this restaurant. As I mentioned before Asitane Restaurant is specialized on Ottoman Palace Cuisine (in my previous entry). Most of the dishes on the menu have dates next to them. These dates are showing from which period of the Empire, the recipes are coming. Actually it is not that easy to find all those recipes. During Ottoman times, the chefs of the Palace were not writing down their recipes, they were all kept in mind as a secret. Being Palace Chef was like an art passing from father to son. If so, how it happens that the recipes are still alive? It is the result of a very deep research made on the archives of Topkapi and Edirne Palace; they took the advantage of shopping lists for kitchen.

I think this is the most impressive way of showing how much effort they put to create that menu. After all those researches, we can now enjoy 2 different menus, one for summer, and the other for winter. There is no need to say that they use only seasonal products to explain the existence of two different menus.

It is all from me now, you can learn more from your waiter about each dish when you are being served at the restaurant.

Vişneli Yaprak Sarma (Rice Stuffed Vine Leaves with Sour Cherry)

Tarifimize gelince, her zamanki gibi önce malzemelerle başlıyorum;

Malzemeler:

750 gr asma yaprağı
7 orta boy kuru soğan
3 su bardağı pirinç
3 yemek kaşığı dolmalık fıstık
¾ bardak vişne suyu
1 bardak su
½  bardak zeytinyağı
1 yemek kaşığı Nar ekşisi
1 çorba kaşığı tarçın
3 çay kaşığı karabiber
3 çay kaşığı yenibahar
3 çay kaşığı toz şeker
2 çorba kaşığı kuru nane
2 tatlı kaşığı tuz
2 yemek kaşığı kuş üzümü
¼ demet taze nane
¼ demet dereotu
¼ demet maydanoz

Tomorrow, my mother will have guests coming over. While thinking what to serve for her guests, I took opportunity to add a very nice recipe to Beg’s Kitchen by deciding to cook Stuffed Vine Leaves with Sour Cherry. I cooked this one previously, and I know how delicious it is, so there is no risk. Although it takes quite some time to cook it, the outcome is worth this effort, I don’t regret J

This recipe is coming from Ottoman Palace Cuisine. I found it from a very nice restaurant specialized on the Ottoman Palace Cuisine. With a combination of their and my mother’s recipe I can write the exact recipe that I cooked without hesitation.

I will mention about this special restaurant in one of my upcoming publication. It is a restaurant that everyone needs to discover and experience its taste at least once in a life time.

As per our recipe; I am starting first with ingredients;

Ingredients;

750 gr vine Leaves
7 medium size onions
3 glass of rice
3 table spoon of pine nuts
¾ glass of sour cherry juice
1 table spoon of pomegranate sauce
½ glass of olive oil
1 glass of water
1 table spoon of cinnamon
1 table spoon of black pepper
3 tea spoon of allspice
3 tea spoon of sugar
2 table spoon of dried mint
2 table spoon of raisons
2 dessert spoon of salt
Fresh mint
Fresh dill
Fresh parsley
½ kg of sour cherry without seeds

Preparation:

First we boil and strain vine leaves.
We will first cut the onion in small cubes and put some oil and salt on the heat. Then we will add pine nuts.

When the onions become soft enough we will add 3 glasses of rice.  Cook it for 10 more minutes without adding any liquid. Then we add sour cherry juice and water. We leave it for 5-10 minutes and take away the casserole from the heat. You need to wait 10 more minutes before adding other ingredients.
Now we will add all other ingredients to the rice and mix it.

After mixing all ingredients, you need to taste and add any spice which is missing. You should feel the taste of cinnamon when you taste. The final ingredient will be olive oil. Now our mixture is waiting the vine leaves J

We will roll the vine leaves with the rice mixture, and in each roll we will add 1 sour cherry. Due to the season, I used frozen sour cherry.

Pay attention to the size of rolls, they need to me more or less at the same size. This is really important for your service.

I suggest you to put your vine leaves as seen on the photo. This helps them to cook pretty well. At the bottoms of your casserole first put some vine leaves, and place your rolls on it. This will avoid your rice stuffed vine leaves to stick to casserole.

Again we will put some more vine leaves after we rolled all of them. And also it is better to slice 1 lemon and place it on the top. The taste will be better.
The last addition is the water. You put water till you see it at the side. In order your vines leaves remain as they are place porcelain plate upside down and cook for 30 minutes. It is always better when you observe during the cooking process. When there is no water left, they will be ready take away from the heat.

It will be more delicious if you cook it one day prior to service time. You can put some sour cherry on your service plate. You should serve it cold.

You are already willing to eat it, right? I would suggest you to try immediately… Bon appetit.
