Fırın Mücver (Zucchini Cake)

Scroll down for Engish...

Malzemeler:
4 Adet orta boy kabak
6-8 adet taze soğan
1 orta boy kuru soğan
3 yumurta
Yarım çay bardağı sıvı yağ
Bir demet dereotu
150 gr beyaz peynir

Lor Peynirli Biber Kavurma (Sauteed Green Pepper with Homemade Cheese)

It was a lazy Sunday form e, that’s why I decided to cook a recipe which is easy to cook and different. This explanation fits “Sautéed Pepper with Lor Cheese” J I would like to advise that we will not only sauté the pepper and add cheese but we will make as well the cheese.

Ingredients:

1,5 kg yoghurt
A pinch of salt
Half glass of water
500gr green pepper
Vegetable oil

Preparation:

First we will make the cheese. Put the yoghurt in a casserole and add some salt and half glass of water. Cook the yoghurt for a while on a medium heat. We will take it away right before it starts boiling. The bubbles at the sides will alert us to take it away from the heat. With this process, we will separate the water of the yoghurt.

Wait until it gets cool. When it is cold, we will strain the yoghurt. We need a strainer and a kitchen cloth. Place the cloth in the strainer and pour your yoghurt. You need to wait approximately one hour for yoghurt to be strained. This cloth helps your cheese to be strained better.

At the end of this procedure, you have your delicious Lor Cheese. Now it is the easiest part of our appetizer. You only need to the peppers into small pieces. Sauté them in vegetable oil in a pan.

When you get peppers sautéed, you add the cheese and just mix it. As soon as you mix the cheese and the peppers, you are ready to take it away from the heat.

Yes, your Sautéed Pepper with Lor Cheese is ready to be served. This is one of the favorite appetizers of my family. Homemade cheese adds lots of taste to this dish, but of course if you don’t want to do the cheese on your own, just buy some and add it to your sautéed peppers. You are going to love it…J

Vişneli Yaprak Sarma (Rice Stuffed Vine Leaves with Sour Cherry)

Tarifimize gelince, her zamanki gibi önce malzemelerle başlıyorum;

Malzemeler:

750 gr asma yaprağı
7 orta boy kuru soğan
3 su bardağı pirinç
3 yemek kaşığı dolmalık fıstık
¾ bardak vişne suyu
1 bardak su
½  bardak zeytinyağı
1 yemek kaşığı Nar ekşisi
1 çorba kaşığı tarçın
3 çay kaşığı karabiber
3 çay kaşığı yenibahar
3 çay kaşığı toz şeker
2 çorba kaşığı kuru nane
2 tatlı kaşığı tuz
2 yemek kaşığı kuş üzümü
¼ demet taze nane
¼ demet dereotu
¼ demet maydanoz

Tomorrow, my mother will have guests coming over. While thinking what to serve for her guests, I took opportunity to add a very nice recipe to Beg’s Kitchen by deciding to cook Stuffed Vine Leaves with Sour Cherry. I cooked this one previously, and I know how delicious it is, so there is no risk. Although it takes quite some time to cook it, the outcome is worth this effort, I don’t regret J

This recipe is coming from Ottoman Palace Cuisine. I found it from a very nice restaurant specialized on the Ottoman Palace Cuisine. With a combination of their and my mother’s recipe I can write the exact recipe that I cooked without hesitation.

I will mention about this special restaurant in one of my upcoming publication. It is a restaurant that everyone needs to discover and experience its taste at least once in a life time.

As per our recipe; I am starting first with ingredients;

Ingredients;

750 gr vine Leaves
7 medium size onions
3 glass of rice
3 table spoon of pine nuts
¾ glass of sour cherry juice
1 table spoon of pomegranate sauce
½ glass of olive oil
1 glass of water
1 table spoon of cinnamon
1 table spoon of black pepper
3 tea spoon of allspice
3 tea spoon of sugar
2 table spoon of dried mint
2 table spoon of raisons
2 dessert spoon of salt
Fresh mint
Fresh dill
Fresh parsley
½ kg of sour cherry without seeds

Preparation:

First we boil and strain vine leaves.
We will first cut the onion in small cubes and put some oil and salt on the heat. Then we will add pine nuts.

When the onions become soft enough we will add 3 glasses of rice.  Cook it for 10 more minutes without adding any liquid. Then we add sour cherry juice and water. We leave it for 5-10 minutes and take away the casserole from the heat. You need to wait 10 more minutes before adding other ingredients.
Now we will add all other ingredients to the rice and mix it.

After mixing all ingredients, you need to taste and add any spice which is missing. You should feel the taste of cinnamon when you taste. The final ingredient will be olive oil. Now our mixture is waiting the vine leaves J

We will roll the vine leaves with the rice mixture, and in each roll we will add 1 sour cherry. Due to the season, I used frozen sour cherry.

Pay attention to the size of rolls, they need to me more or less at the same size. This is really important for your service.

I suggest you to put your vine leaves as seen on the photo. This helps them to cook pretty well. At the bottoms of your casserole first put some vine leaves, and place your rolls on it. This will avoid your rice stuffed vine leaves to stick to casserole.

Again we will put some more vine leaves after we rolled all of them. And also it is better to slice 1 lemon and place it on the top. The taste will be better.
The last addition is the water. You put water till you see it at the side. In order your vines leaves remain as they are place porcelain plate upside down and cook for 30 minutes. It is always better when you observe during the cooking process. When there is no water left, they will be ready take away from the heat.

It will be more delicious if you cook it one day prior to service time. You can put some sour cherry on your service plate. You should serve it cold.

You are already willing to eat it, right? I would suggest you to try immediately… Bon appetit.

Son başvuru tarihi sonrası on eleme sonuçlarını sabırsızlıkla bekledim. Gün geldi çattı ve finalist mezeler açıklandı. Veeee benim mezem de finale katılacak 50 mezenin arasındaydı. Tahmin edersiniz ki buna çok sevindim.
Finalistlerden istenen mezelerin tam ölçülü halini evde pişirip, özel olarak ayarlanan yarışma mutfağında servise hazır hale getirmekti.
Heyecanla Çırağan’a gittim final günü, elimde mezem :)

Yarışmayı kazanan mezeler;

It was one of the days that I was checking out what was going on Facebook and suddenly saw an announcement from Çırağan about this “Meze Competition” They were looking for the best original recipe. As soon as I saw that announcement I thought it was just for me. The easiest part was to decide on the participation but the hardest one was to decide what to cook. My mom and I started a brain storming to pick the meze, and finally decided to prepare our “breakfast puree” which is mainly made of smoked eggplant and red bell pepper.

I prepared the meze with great excitement, took the photo of it and immediately applied to the competition. It was an application online where you put the recipe, preparation; story of the meze and of course the photo. I will be sharing below all these details after I explain how this competition has ended.

After the application, I started to wait the announcement date of the finalists. And the day arrived. And Yes, my mezze was one of the 50 finalist mezes. As you can imagine I was so very much happy to have that news.

As a finalist, we were requested to prepare our meze at home with the ful recipe and take them with us to Çırağan Palace where we were supposed to prepare for the service. The only thing that we did was the presentation.

And, I was there, nearly shaking, with my meze on the final date.

They took us to competition kitchen where they placed counter for the finalists with the names on them.

I prepared a very good presentation, at least I thought like that. After we delivered the presentation, a very long wait has started. They announced that the winners will be declared with a cocktail at 5:00pm.
Bu the why, I forgot the mention about the awards. First 3 would be having several accommodation and dinner awards. But the most important thing was the case that the winner mezes would be served with the names of the competitor throughout the year at the fish menu of Çırağan. Since I am in travel industry, accommodation and dinner awards were not the ones that encourages me but to be on the menu of Çırağan. That’s why I participated.
As per the winners, unfortunately I cannot give good news on behalf of myself. My lovely meze was not at the first three, but it was a very good experience for me. Okay, I admit that I was pretty keen on being in the first three but it didn’t happen J

Here below you may find the names of the winner mezes;
-          Seafood Stuffed Cabbage
      -          Zucchini Salad with yoghurt and walnuts (how interesting, isn’t it?)
      -          Hibeş (a traditional meze from south of Turkey made of mainly with tahini)

After giving that many details about the competition, here below you may find the story and the recipe of my meze.

This is a regional recipe, so I am really proud of sharing it J.

Actually I don’t have for the time being the photos of the preparation; I do have only the phones that I took during the competition. In the near future when I cook again this meze, I will take the photos and will update it with the photos.

Story of my meze

This recipe is something that my family is using for years since my childhood. We call it breakfast puree “Kahvaltılık”. When I say breakfast puree it doesn’t give real meaning I called it for this competition Eggplant & Red Pepper Puree.
This meze can be prepared in big amounts and could be conserved when it is closed hot in glass jars. This way you can enjoy your meze whenever you want, even for breakfast or as a side dish. Late summer my family arranges a special day to prepare this puree, kilos of eggplants and red peppers, to be ready for winter. This something very typical for us but I know that no one knows about this. So I wanted to share this secret with everyone with help of this competition. Everyone would hopefully like it.

Ingredients:

½ kg of Eggplant
½ kg of Red Bell Pepper
250gr of tomatoes
1 carrot
2 pieces of garlic
1 espresso cup of olive oil
2 espresso cups of cracked walnut
Salt, black pepper and cumin
Preparation:

First you smoke the eggplant & red bell pepper.
After you smoke eggplant you take out the black skin and squeeze some lemon so that eggplants remain white.
And after smoking the red bell pepper take out the skin and seeds.
Use a blender to make the puree of eggplants and red bell peppers.
Grate the carrot and tomatoes
First you cook in a pan grated tomatoes and carrot with a little bit of salt.
When they are cooked add eggplant and red bell pepper.
You will cook at least 20 minutes until you sure that no water of vegetables remains.
You will be adding some more salt when you add eggplants.
When it is cooked, take away the pan from the heat and add cumin and black pepper and finally cracked walnuts.

Service:

You put your puree to a service plate and add some walnuts on it as well. You can also serve this meze with some thick cream on the side.

NOTE: When you have time, you should really try this and conserve them in glass jars in order to use at a later stage. Even for breakfast or as a side dish.
