Anzac Kurabiyesi (Anzac Cookies - Biscuits)



Haftalar sonra bugün mutfağa girmeyi başarabildim. Tadını çok sevdiğim ancak daha önce hiç yapmadığım Anzac Kurabiyelerini denedim. Bu tarifi yapmamın özel bir nedeni var. Tarifin içinde Golden Syrup denen bir malzeme var. Bu şurubu Türkiye’de kolay bulamıyoruz. Bir ay önce Avutralya’dan çok sevdiğim bir müşterim Türkiye’ye gelirken bize Golden Syrup getirdi. Sebebi tabii ki benim blogum değil J,  Türkiye’ye gelecek olan büyük bir gruba Anzac Kurabiyesi yaptırmak istememiz. Ama artan şuruba Beg’s Kitchen’da sizlerle paylaşabilmek için el koydum J Teşekkürler Anne Blucher...






Tarife geçmeden önce bu kurabiyenin geçmişinden biraz bahsetmek istiyorum. Öncelikle isminden de anlayacağınız gibi (ANZAC – Australian and New Zealand Army Corps) Avustralya’ya özgü bir tarif. 1. Dünya Savaşı sırasında Gelibolu’da savaşan Avustralyalı ve Yeni Zelandalı askerlere aileleri pişirip yanlarında göndermiş. Bu kurabiyelerin en önemli özelliği çok uzun süre bozulmadan dayanabilmesi. Savaş dönemi için ideal bir tercih olduğunu söyleyebiliriz. Uzun süre dayanmasının en önemli sebebi yumurtasız olarak yapılması. Savaş sırasında Anzac askerleri bu kurabiyeleri yoğun olarak tüketmiş. Yüz binlerce kişinin ölümü ile sonlanan bu savaş sonrası bu kurabiyeler (aynı gelincik çiçekleri gibi) bir dönemin sembolü olmuş vaziyette. Anzac Kurabiyesi diye anılmasının sebebi budur. Yine bildiğiniz gibi Gelibolu’da hayatını kaybeden Anzac askerlerini anmak üzere her sene 25 Nisan’a “Şafak Töreni” düzenleniyor. Bütün gece şafak vaktinin beklenmesi ve sonrasında sırasıyla yapılan törenlerle son bulan günde Gelibolu’da hayatını kaybeden askerler anılıyor. Bu özel günün bir parçası olan Anzak kurabiyelerinin tarifine birazdan kavuşacaksınız.

Diğer kurabiye tariflerine göre içeriğindeki malzemeler nedeniyle biraz farklı. Çok beğeneceğinizi düşündüğüm bu kolay tarifi kesinlikle denemenizi öneririm.

Golden Syrup : Şeker kamışından elde edilen bal tadına yakın daha akışkan bir şurup. Türkiye’de çok kolay bulunan bir ürün değil, yerine pekmez veya bal kullanılabilir. Pekmez daha yakın bir tat verecektir. Bu tüyo Avustralyalı biriden geldiği için güvenilirdir J



Malzemeler :
1 kupa yulaf ezmesi
1 kupa un
½ kupa Hindistan cevizi rendesi
1 kupa şeker
125 gr tereyağı
Bir çay kaşığı karbonat
2 çorba kaşığı Golden Syrup
2 çorba kaşığı kaynamış su






Hazırlanışı




Tüm katıları hamurunuzu oluşturacağınız bir kapta karıştırın.







Ufak bir tencerede tereyağınızı ve 2 kaşık Golden Syrup’u iyice eritin.
Ayrı bir yerde kaynamış su içinde karbonatı eritin ve tereyağı, şurup karışımına ekleyin.
Karbonatı tereyağına eklediğinizde sıvı karışımınızı kabardığını göreceksiniz.

Karıştırmış olduğunuz katı malzemelere sıvı karışımını da ekleyip bir kaşık yardımıyla veya elinizle iyice karıştırın.







Diğer kurabiye hamurlarında olduğu gibi bir kıvam elde etmeyeceksiniz. Hamurunuz sanki hiç toparlamayacakmış gibi görüyor olacak, ama korkmayın sorun yok J zaten böyle olması gerekiyor.
Ceviz büyüklüğünde yuvarlak toplar oluşturun ve 3-4 cm mesafelerle tepsinize dizin. Bu arada fırını ısıtmaya başlayabilirsiz.



Hazırlamış olduğumuz hamurları mesafeli bir şekilde koyduktan sonra bir çatal yardımıyla kurabiyeleri ezeceğiz. Şekillerinin çok düzgün olmamasını hiç dert etmeyi, bu kurabiyein özelliği bu.












Bastırmış olduğuz kurabiyeleri 10-15 dakika boyunca 180 derecede pişireceksiniz. Belirtilen süreden ziyade kurabiyelerin fırında çıkmasın aldıkları renk karar verecek. Kurabiyeleriniz hafif kararıp altı rengini aldığında fırınınızı kapatıp, içinde biraz daha bekletebilirsiniz.






Kurabiyeler soğumaya bırakıldıktan sonra servise hazır olacak. Soğuduğunda kurabiyeleriniz sertleşecek ve tadı çok lezzetli bir hal alacak. Çok uzun süre bu kurabiyeleri saklayabilirsiniz, zaman geçtikçe kurabiyeler yumuşayacaktır.

Finally today, after several weeks, I had chance to enjoy my kitchen. Today’s product is Anzac Cookies (Biscuits). I knew the taste but I never tried cooking this. I have a special reason to cook those cookies. One of the ingredients of the recipe is something that we cannot find easily in Turkey “Golden Syrup”. A month ago one of my clients brought this syrup from Australia. Actually it was not especially for my blog, she brought it for a  large Australian Group. We prepared Anzac Cookies for them in İzmir. But I took  the opportunity to cook them in my kitchen as well to be able share on Beg’s Kitchen. Thank to Anne Blucher for making this happen.

 
Before the recipe, I want to mention about the story of Anzac Cookies. As you may understand from its name (ANZAC – Australian and New Zealand Army Corps) the recipe is originated from Australia. The families sent those cookies to the soldiers who fought at Gallipoli during 1st World War. The most important thing about these cookies is the fact that they last very long time without changing the taste. So Anzac Cookies are really the most ideal thing to cook during the war.


They last really long because it does not contain egg in it. During the war, Anzacs consumed quite a lot of these cookies. As you all know this battle ended with over 100 thousands of death, and since then the cookies became the symbol of this period (like the poppies). That’s why we call them Anzac Cookies (Biscuits). Every year at dawn time on 25th of April, there is this memorial ceremony “Dawn Service” that takes place in Gallipoli. Many Australians come to Gallipoli in respect of the memories of the Soldiers who lost their lives there.

You will be receiving the recipe of these cookies very soon for the memory of all who lost their lives at Gallipoli.

This recipe is a little bit different that the other cookie recipes. I highly suggest you to give a change to these cookies.

Golden Syrup: This syrup is made of sugar cane. Unfortunately in Turkey it is not that common. This is something between honey and molasses. If you cannot find the syrup, you may simply cook it with molasses. This hint is given by an Australian, so you may trust that J


Ingredients:
A cup of rolled oats
A cup of flour
½ cup of coconut
A cup of sugar
125 gr butter
1 teaspoon of baking soda
2 table spoon of boiling water
2 table spoon of Golden Syrup

Preparation:
Mix all solids in a cup

In a saucepan, melt the butter with 2 teaspoons of Golden Syrup. Stir the baking soda with hot water and add to the butter & syrup mixture. With the baking soda you will see bubbles coming up.

Now it is time to mix solids and liquids. Mix all ingredients together.

The consistency of your mixture will be different than the other cookie recipes as if they will never come together. But don’t worry, this is how it is. Roll the mixture of balls (walnut sized) and place them in your tray with 3-4cm distances. Meanwhile you can start heating your oven.

After you roll the entire mixture, press on top of the balls with a fork. The shapes will not be perfect, but this is what makes these cookies so cute.

Bake them for 10-15 minutes until they are Golden Brown at 180 Degrees ( C ).

When they are cool, your cookies will be ready for the service. They will be hard after they got cook. You may keep them very long time, and they will be softer in time.
